I broke the seal on my pumpkin puree last weekend and made these Skinny Pumpkin Pancakes! Too soon...? I think not!
Skinny Pumpkin Pancakes Ingredients:
1 cup white whole wheat flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1 tsp pumpkin pie spice
1 cup unsweetened almond milk
3 large egg whites
1/4 cup canned pumpkin
2 tbsp pure maple syrup
1 tsp vanilla
2 tsp oil
warmed maple syrup, for topping (extra)

-Heat a few tablespoons of Balsamic Vinegar in a large skillet.
-Add chopped Kale, onions, & mushrooms.
-Cook until tender.
-Add 1/4 cup if Feta cheese and cook for a few more minutes.

I used my Ninja for this recipe and it was SUPER easy and quick! If you have a Ninja with a food processor attachment I highly suggest using it! I never even had to touch raw meat, it was amazing!!!

I whipped this up the other night and I can't complain! It was a tasty, summer time treat! Cake:
1 scoop vanilla Shakeology
2 tbsp water or almond milk (I used almond milk)
2 tsp lemon extract
1 tsp lemon zest (optional)
1/4 tsp baking powder
Mix together Shakeology and baking powder, then add egg, water/milk, and lemon extract. Mix thoroughly until smooth. Microwave for 1 - 2 minutes depending on your microwave.
