Tropical Stir Fry

Looking for a healthy recipe? Look no further! Check out this tropical stir fry! It’s pretty easy, very healthy, and it’s scrumptious if I do say so myself! You pretty much just throw everything (except the rice/ cilantro) into a wok and saute until tender, then throw your rice/ cilantro and saute for a few more minutes. But.. for the sake of complicating things I wrote out step by step directions for you. You are welcome ;)

Tropical Shrimp Stir Fry

Ingredients:

1 lb cooked shrimp, peeled, deveined, and tails removed

1 small red onion, chopped

1 bell pepper, chopped

6-8 garlic cloves, minced

*1 can of all natural tropical fruit medley - no sugar added OR 1 1/2 cups fresh pineapple

2 tbsp coconut oil

½ - 1 tspn red pepper flakes

Splash of soy sauce

2-3 tbsp cilantro chopped

**2 cups brown rice, cooked

Prep:

Heat 1 tspn coconut oil in a wok or skillet over med-high heat

Add bell pepper and onion and saute until tender

Add fruit/ pineapple, cook until pineapple turns golden brown

Add garlic and pepper flakes and cook for about one minute

Add shrimp

Add rice

Add soy sauce and cilantro

Heat for one minute longer

STUFF YO’ FACE!

* We used the tropical fruit medley and it was delicious!! I highly recommend it!

** You could also use spaghetti squash in place of the rice! Save those yellows, right Fixers?!
