GUILT-FREE LEMON ZEST STRAWBERRY SHORTCAKE

I whipped this up the other night and I can't complain! It was a tasty, summer time treat! 

 
Cake:
1 scoop vanilla Shakeology
1 egg 
2 tbsp water or almond milk (I used almond milk)
2 tsp lemon extract
1 tsp lemon zest (optional)
1/4 tsp baking powder
Mix together Shakeology and baking powder, then add egg, water/milk, and lemon extract. Mix thoroughly until smooth. Microwave for 1 - 2 minutes depending on your microwave. 

Whipped topping:
1 egg white
1 tbsp almond milk
1 tsp vanilla
1 tsp honey
1 tbsp vanilla greek yogurt (optional)
Place egg white, milk, vanilla, honey in a large bowl, blend on high for 3-5 minutes. Add vanilla greek yogurt for additional sweetness. Blend until light and fluffy! 

Strawberry mixture:
1 cup sliced strawberries
1 tsp honey
Combine together! That's a hard step, right...?

Cut the Shakeology cake in half and layer with strawberries and whipped topping! Enjoy!
